These Lavender Lemon bars offer a refreshing twist on the classic lemon bar, incorporating the floral notes of lavender into the citrusy tang of lemon!
Ingredients:
For the Crust:
1 cup unsalted butter, room temperature
2 cups all-purpose flour
1/2 cup granulated sugar
1/4 teaspoon salt
For the Filling:
1 1/2 cups of SLF Lavender Sugar
1/4 cup all-purpose flour
4 large farm fresh eggs
Zest of 2 lemons
2/3 cup fresh lemon juice (about 3-4 lemons)
Instructions:
Preheat the oven to 350°F. Line a 9x13-inch baking pan with parchment paper, leaving an overhang on the sides to lift out the finished bars easily.
Make the Crust:
In a large bowl, combine the butter, 2 cups flour, 1/2 cup sugar, and salt. Mix until the dough is just combined and starts to clump together.
Press the dough into the prepared baking pan, spreading it out to an even thickness.
Bake for 18-20 minutes until just golden. Remove from the oven and let cool slightly while you make the filling.
Prepare the Lavender Lemon Filling:
In a larger mixing bowl, whisk together the lavender sugar and 1/4 cup flour.
Add the eggs, lemon zest, and lemon juice, and whisk until well combined. Stir in the lavender-sugar mixture.
Pour the filling over the baked crust.
Bake the Bars:
Bake for an additional 20-25 minutes, or until the filling is set and does not jiggle when the pan is nudged.
Remove from the oven and let cool to room temperature. Then chill in the refrigerator for at least two hours before slicing into bars.
Serve:
Lift the bars out of the pan using the parchment overhang and cut into squares. Dust with powdered sugar before serving, if desired.
