Our New Favorite Summertime Treat- Lavender Lemon Bars



These Lavender Lemon bars offer a refreshing twist on the classic lemon bar, incorporating the floral notes of lavender into the citrusy tang of lemon!


 

Ingredients:

For the Crust:

  • 1 cup unsalted butter, room temperature

  • 2 cups all-purpose flour

  • 1/2 cup granulated sugar

  • 1/4 teaspoon salt

For the Filling:

  • 1 1/2 cups of SLF Lavender Sugar

  • 1/4 cup all-purpose flour

  • 4 large farm fresh eggs

  • Zest of 2 lemons

  • 2/3 cup fresh lemon juice (about 3-4 lemons)


 

Instructions:

  1. Preheat the oven to 350°F. Line a 9x13-inch baking pan with parchment paper, leaving an overhang on the sides to lift out the finished bars easily.

  2. Make the Crust:

  • In a large bowl, combine the butter, 2 cups flour, 1/2 cup sugar, and salt. Mix until the dough is just combined and starts to clump together.

  • Press the dough into the prepared baking pan, spreading it out to an even thickness.

  • Bake for 18-20 minutes until just golden. Remove from the oven and let cool slightly while you make the filling.

  1. Prepare the Lavender Lemon Filling:

  • In a larger mixing bowl, whisk together the lavender sugar and 1/4 cup flour.

  • Add the eggs, lemon zest, and lemon juice, and whisk until well combined. Stir in the lavender-sugar mixture.

  • Pour the filling over the baked crust.

  1. Bake the Bars:

  • Bake for an additional 20-25 minutes, or until the filling is set and does not jiggle when the pan is nudged.

  • Remove from the oven and let cool to room temperature. Then chill in the refrigerator for at least two hours before slicing into bars.

  1. Serve:

  • Lift the bars out of the pan using the parchment overhang and cut into squares. Dust with powdered sugar before serving, if desired.


 

This combination of lavender and lemon creates a beautifully balanced flavor that's perfect for a spring or summer treat. Happy baking!
